Ingredients:
Medium/Large Potato: 1
Medium Leek: 1
Eggs: 3
Small Onion: 1/4
Garlic: Half a clove
Cheddar Cheese: some
Butter: 2 Knobs
Olive Oil
Tarragon
Black Pepper & Salt

- Roughly dice part boiled potato. Gently sauté, but not fry, in butter and olive oil. Add onion, finely chopped, and crushed Garlic to soften and flavour as potato cooks.
- Stir in around 4 inches of medium sized leek, cut in rounds towards the leaves, followed by a sprinkling of dried tarragon. Season with salt and ground black pepper. Sauté a little more then cover to complete cooking.
- Lightly beat eggs and then pour into large omelette pan in which a knob of butter has been brought to the sizzle. Cook omelette until browning underneath, but barely set on top.
- Ensuring the potato/leek filling is hot, place this on omelette. Grate cheese over, fold omelette immediately to heat egg through.Enjoy on its own or with salad.
